Elements of the Filipino Kitchen



I thought I would feature here some of the basic elements, aside from the usual kalderos, pans, spoons, etc. that I use in my kitchen. This is by no means complete, and I may add more equipment from time to time.

Rice cooker. I don't need to say anything about this except to invest in a good sized one. Especially if you have lots of relatives who have the penchant to drop by for lunch.

Any kitchen should have a good set of sharp kitchen knives. A cleaver is especially important in the Filipino kitchen as you will do a lot of chopping, even bones.

A k'wali or a wok. Your workhorse. I'd rather have the kawale with a handle, but a wok suffices for my kitchen (although I do have a Filipino kawale but I don't have a picture of it as of now. Most of your cooking will involve gisa (sauteeing) in a hot stove ... and the curved bottom of the wok is specially designed to to this. (Don't ask me the physics of this.)

A food processor could be handy especially when you need a lot of chopping and mixing for that huge Christmas party that you volunteered to cook. Great tool for making leche flan by the way.
