Elements of the Filipino Kitchen - Part II
I thought I would feature here some of the basic elements, aside from the usual kalderos, pans, spoons, etc. that I use in my kitchen. This is by
no means complete, and I may add more equipment from time to time.

A hand grater. Oh yeah. I may have the fancy food processor(s)
in my kitchen but a hand grater, as the
name implies, is always handy. You have control and it's unbeatable for making the achara
that you've so ambitiously planned to work on.

In my kitchen, I do a lot of peeling and grating and shredding so
I have a lot of gadgets especially the Filipino shredder in the middle that I asked someone to bring from home.

A mortar and pestle (almirez) is really a must. You need to pound
those spices to have that fresh flavor.

Chopping boards. You need at least one chopping board (I have two, one small one on top of
the big one, sorry for the photo, they're both white in color), as you will be
doing a lot of chop chop chopping. I recommend a sturdy plastic one ... why? They're easy to clean and don't
harbor bacteria that much.
