Arroz a la Valenciana


A simplified arroz a la valenciana

You will need:

1 chorizo de Bilbao (you can get Spanish sausages sometimes, if not, use pepperoni), sliced
olive oil
garlic, 2 cloves, prssed
onion, sliced
red pepper
sliced chicken liver and chicken gizzard
cooked and shredded chicken breast
pork, diced
1 can tomato sauce
peas and raisins
fried cooking bananas like plantain or saba
salt and pepper
and your rice (glutinous)

What you do is you cook your rice separately just like how you cook rice. While that is cooking, you then saute onions and garlic in oil until the onions are transparent, add the chorizo and continue sauteing, then add the chicken tidbits, chicken meat and pork and continue simmering, then tomato sauce and salt and pepper. Simmer for about 2-3 minutes, then add the peas, raisins and red pepper, simmer some more, then add the cooked rice.

Sometimes I make daya, instead of tomato sauce for the color, I use Spanish rice that you can buy in a pack - this is already yellow in color and has some spices already in it, I just add the meats.

Also for the arroz in the picture, I really didn't have chorizo, so I used Italian sausage. It worked. Sort of.

Serve with fried banana on the side.
