Manong Ken's Recipe of the Month - August 2000

Bibingka

For this recipe, I used the White King Bibingka Mix. It worked beautifully.

1. Place oven rack 8 inches away from the heating element. Set oven at broil. If broil is not available, set oven at 450 F.

2. Line two (8-inch diameter) layer pans with wax paper (I used banana leaf for authenticity; if you can find banana leaves in your corner of the world, I recommend using this as it imparts a nice aroma to the cake). Set aside.

3. Beat 3 eggs until frothy. Add one 250 grams pack White King Rice Cake Mix, 1 cup water, 1/2 cup confectioner's sugar, and 4 tablespoons melted butter or margarine. Mix at low speed of electtric mixer for 1 minute or with a wooden spoon until smooth. Pour into prepared pans. Top with cottage cheese and sliced pieces of itlog na maalat (salted eggs). You can probably use half flour/half rice flour instead of the cake mix. Add a little bit of sugar and salt.

4. Broil for 10 minutes or bake at 450 F for 10-15 minutes or until done. Brush surface with butter or margarine and serve hot.
