Chicken Binakoe

Chicken binakol is an Aklanon dish. It is just like chicken tinola (Filipino chicken stew), however, instead of cooking the chicken in a pot, it is cooked inside one node of fresh bamboo.

  • 1 whole dressed chicken, cut into pieces (Asian way)
  • unripe papaya, peeled, de-seeded and cut into strips
  • ginger, sliced (lots of it if so desired)
  • 1 medium onion, sliced
  • peppercorns
  • sliced tomato (or anything to sour - we use leaves of the aeabihig tree but I don't know its equivalent in English)
  • salt or patis to taste
  • 1 tanglad (lemon grass) leaf
  • 1 or two bay leaf
  • 1 or 2 nodes of freshly cut green bamboo

Mix ingredients and put inside bamboo (or cooking pot). Cover cut end of bamboo with banana leaf or aluminum foil. Cook in an open pit (see photograph).
