Nilagang Mani (Boiled Peanuts)

This is amazing. You sometimes take things for granted, and this is one of them. For years, I've seen raw peanuts being sold in the supermarket cheap but I never found a reason to buy them - until recently, when I got again, another craving for a comfort food. Boiled peanuts, or nilagang mani or in Aklanon, eina-gang mani, was another treat for me - especially on Thursdays when I was a kid. Thursdays were market days in my hometown of Malinao, Aklan and merchants including peanut merchants from all over would bring their wares and produce to the market. So every Thursday we would have all kinds of peanuts in the house - and boiled peanuts was my favorite.

It's very easy to do this. In a large sauce pan, cover peanuts (still in shell) with enough water. Add salt. Boil until peanuts are tender.

Eat to your heart's content.
