Sardinas

This is a comfort food for me. This might be a strange food for others, but if you're a Filipino especially from the provinces and grew up when electricity was not available in your area, you probably are very familiar with this "delicacy."

  • canned sardines in tomato sauce (de lata) - not Portuguese
  • red onions sliced
  • olive oil

Open canned sardines.

Heat olive oil in pan. When oil is hot, add onions and saute until transparent. Add sardines including tomato sauce. Simmer for about ten minutes. Note: This dish is highly odoriferous which might be offensive to some.
