I really don't have a recipe for fried rice. I just wing it but I love garlic so I start with a lot of it.
So basically, for fried rice, you need left over rice, garlic, cooking oil, salt and pepper, soy sauce, pieces
of meat (pork, chicken, beef, etc.), egg (scrambled), shrimps, onion, green onion and whatever else you can think of adding - like peas maybe.
Heat oil in frying pan. Add crushed garlic (quantity as much as you like) and sliced onion. As soon as the onion becomes transparent and the
garlic golden brown, add your meat choice. Sautee for a while until the meat turns brown. Add rice. Make sure that you separate your rice grain
before adding otherwise you'll end up with lumpy, unevenly cooked fried rice. Add your other ingredients ... and then salt and pepper to taste.
To make your rice a little bit more colorful, add soy sauce. Garnish with spring onions. Makes good brunch.
I love simple fried rice though - just garlic and rice - with tapa and fried egg.
