Manong Ken's Recipe of the Month - March 2001

Singkamas Salad

You can now buy singkamas in big grocery chain stores here in the US. Its Mexican name is jicama so there is no reason why you won't be able to make this. It is very easy to do.

  • singkamas (jicama)
  • white vinegar
  • salt (asin)

Peel jicama. Slice peeled jicama into thin slices. Add the vinegar and sprinkle with salt. Refrigerate and serve cold. It is a very refreshing salad. You can also just bite on the plain jicama after making sawsaw (dip) to the asin and vinegar.

You can also add jicama slices to green salads to add a little bit of edge to your salad.
