Ube Ice Cream

Someone e-mailed me a few months back to ask for an ube ice cream recipe. Well, a few weeks ago, we were packing stuff as we are remodelling our apartment when I found an ice cream maker at the back of our pantry. Hmmm ... so I thought I'll try making ube ice cream.

You need to have an ice cream maker for this. They are not that rare, you can find them in any small appliance store.

Follow the direction from the manufacturer of your particular ice cream maker. Mine for example needs the ice cream pot to be chilled at minus eighteen degrees celsius (0 degrees F), not lower or higher. The pot needs to be frozen overnight (at least seven hours).

For this recipe, my ingredients were:

Ube (frozen) about half a cup - this is usually available in a Philippine store. You may substitute with the powdered variety
Shredded young coconut (fresh), about 1/4 cup (omit if you don't have)
Fresh cream, 1 cup
Milk, 1/2 cup
Sugar, 1/2 cup
Vanilla extract, 1 tsp.

You need to mix the ube and the coconut shreds in a blender otherwise the mixture will not freeze very well. As soon as you have this, that's it! Just follow the instruction for your ice cream maker. You might also want to vary the amount of the ingredients to your taste. Enjoy!
