Inihaw na Talong (Broiled Eggplant)

Inihaw na talong garnished with tomato slices and onions

Sa amin, sa Pampanga, we broil the eggplant over charcoal, skin it, and then mash it. The eggplant is then tossed in vinegar, salt, sugar, ground pepper and a lot of crushed garlic.
