Bagoong Alamang
Similar: bagoong balayan, ginamos (fermented anchovies), alamang (fermented tiny shrimps).
Very salty like caviar, tastes and smells like it too. In fact, Filipinos are proud to consider
bagoong as their caviar. Kare-kare (ox tail in peanut sauce) and pinakbet
(a melange of vegetables from the North) are not complete without bagoong on the side.
So is manggang hilaw (unripened mangoes).
