Goto is actually the dish that this part of the cow's stomach is made into. I am not sure what the actual
name of the organ in Filipino, but it is the "reticulum" of the cow's 4-chambered-stomach where grass is ground
into a soupy mash which is then fermented in the main chamber (the rumen). This part of the cow's stomach is called
the reticulum because its interior is thrown into folds that resemble the reticulum of a beehive. Once cleaned and
stripped of its inner covering (epithelium) which is usually dark because of grass stain, the organ becomes white
like ivory and is known as tripe. The organ is then used for dishes such as goto (rice gruel with pieces of
reticulum, also known as congee in Chinese restaurants; also see arroz caldo, a similar rice porridge except that chicken is used as the meat ingredient) and callos, a sort of Spanish-recipe with pieces of
reticulum and garbanzo beans in tomato sauce.
