Pata (Pork Hocks)


Pata

Pata is the whole limb of the pig (both front and back) - pork hocks basically (although strictly speaking, hocks applies only to the hind limb). In grocery stores here in the US, they are divided into hocks and feet. Also known as pig knuckles. They look and sound gross as food but when they are made into crispy pata, no one seems to complain. I do not have a recipe of crispy pata yet, although I am sure it is not hard to make.
